The journey that became Nyama

Nyama began in 2002 in the South African town of Stellenbosch when two friends — Johannes Burger and George Zaayman — set out to share their love of fire-cooked food beyond their homeland.

Leaving South Africa didn’t mean leaving its culture behind; we were determined to bring a piece of it with us.

For us, a BBQ — or a braai, as we grew up calling it — has never been just food cooked over fire. It’s a ritual, a gathering, and a way for people to relax, celebrate, connect, and share great food. As we travelled and cooked, we discovered that almost every culture has its own fire-cooking traditions — Argentine asado, Brazilian churrasco, American BBQ, Italian wood-fired pizza, Mexican tacos al carbón. Each tradition is deeply tied to food, people, and atmosphere, and these experiences shaped the way we cook and host events today.

Our goal has always been to bring authentic BBQ traditions — and the cultural experiences behind them — to every event we cater across the UK. It’s not just a meal; it’s a shared, memorable gathering your guests will remember long after the day is over.

In 2012, Werner Pretorius joined our team, bringing years of food-and-beverage expertise. Together, we built the talented chef team that defines Nyama today and expanded into mobile bar services to create seamless, all-in-one event experiences.

Now, more than two decades since we first lit the fire, we’re proud that Nyama has become one of the UK’s recognised caterers for weddings, private parties, and corporate BBQ events —

Sustainability

At Nyama, we believe BBQ should taste incredible while being approached responsibly. Cooking on a large scale comes with impact — from climate and water use to land management and animal welfare — and we do everything we can to minimise that impact.

We source our ingredients carefully, choosing meat, poultry, dairy, and eggs from suppliers with strong environmental and welfare standards, using seafood from sustainable stocks, and prioritising local and seasonal produce whenever possible. Fairtrade support and freshly prepared dishes without artificial additives are part of our commitment to quality and responsibility.

Even though Nyama literally means “meat” and we love it, we offer more plant-based and vegetarian options, a fully meat-free BBQ menu, and encourage flexitarian choices to create colourful, creative, and kinder feasts.We also pay attention to energy use and waste. Efficient equipment, careful travel planning, and smart food storage help us reduce our carbon footprint, while recycling, composting, and anaerobic digestion of food waste ensure nothing goes to waste unnecessarily. When disposables are needed, we make sure they are reusable, recyclable, or biodegradable.

We’re not claiming to save the planet on our own, but every dish is prepared thoughtfully, with responsibility at its heart. Good food shouldn’t cost the earth — and with Nyama, it doesn’t.
